Jamie Oliver's Roast Chicken

You know, for someone who would rather do absolutely everything else than cook, I've been doing a lot more cooking lately.  Here's another tried and true recipe that I turn to when there's nothing left in the fridge. 


I love Jamie Oliver's recipes for their simplicity and ease.  They're all more of a "chuck everything in and end up with a scrumptious meal" kind of thing and this roast chicken is amazing!  I can't count the number of times I've made it and each time, it hasn't failed to please. 


All the ingredients are staples that you'll normally have in your kitchen.  I'm the type of person who follows a recipe to the dot and has to keep re-reading each and every line.  Yes, I'm obsessive like that.  However, with this roast, no matter what you do, it turns out yum each time.  I've even started winging it and doing my own thing.  Hey, even my two little monsters love it and plead for the left overs which means I'm doing something right!  It goes really well with kubboos too (Arabic bread). 


I normally spatchcock (oooh, fancy word!) the chicken though so that it cooks faster and more evenly, hence the lack of a photo of the whole bird.  I also like to throw in a few onions too.
